With a few big projects behind me, I feel like I can rejoin the bloggy world. In the last few weeks I've had a lot going on.
I am part of the yearbook team at school (there's two of us) and the yearbook was due at the beginning of April. In true procrastinator fashion, I waited until the last minute to do my half of the pages.
In the middle of all that, throw in writing report card comments. I always want to make sure I say just the right thing. I want to give the parents as much information as possible about their child, as well as be accurate about what I say. No sense saying Hilda knows her addition and subtraction facts like a breeze when she doesn't!
Then, this weekend I had the craft show at Grandma Smith's community club house. I was up the night before keeping company with the owls finishing up just a few more things.
For now ~ no deadlines loom in my near future. I feel like I can breath again and go at a relaxed pace. For a minute
This week for dinner:
- BBQ chicken (crockpot)
- beef strogonoff (Greg cooks this dish. Awesome.)
- breaded chicken & mashed potatoes
- hamburgers
- ground beef enchiladas
- country chicken stew
- steak & noodles

Post your ground beef enchilada recipe when you make it. I've been thinking about making some beef ones because I always do chicken ones and I'm tired of the same old same old.
